Tomato Cobbler by Rachel

So much energy goes into make the holiday entree that sometimes the side dishes are forgotten.  If you're looking for something easy and new to serve at your holiday dinner this year, try this easy recipe for tomato cobbler!

It's a warm and festive dish to serve for the holidays with the bright color of the tomatoes and the toasty-ness of the biscuits on top.  Without further ado...!

Ingredients
Filling
1 large onion, diced
2 tbsp butter
1 tbsp olive oil
2 cloves of garlic, diced.
2-3 pints of grape or cherry tomatoes, washed and halved
1 tbsp fresh, chopped basil
3 tbsp flour
3 large pinches of salt
black pepper to taste



-Preheat oven to 400 degrees Fahrenheit.

- Heat a skillet and add your butter and olive oil in.  Once the butter has melted, add in your onion and 2 pinches of salt and cook until the onions caramelize.  On medium-high heat, this should take about 15 minutes.  Then, add in the diced garlic and cook for another 2 minutes.  Remove the mixture from the heat.


- Add the tomatoes and basil into a  mixing bowl.  Add in the onion and garlic mixture, then mix in the 3 tbsps of flour and one more large pinch of salt.  Add in your black pepper and stir the mixture well until the flour has coated all the tomatoes.



- Transfer the mixture to an oven-safe casserole dish and bake for about 20 minutes.

Biscuits
2 1/4 cups flour
3/4 tsp salt
4 tsp baking powder
1/3 cup butter, cold and diced
1 cup cold milk

- Sift together the flour, salt and baking powder.  Add in the cold, diced butter and mix in until the batter looks like crumbs.  Add in the milk and mix the dough until it starts to come together.  Once it's holding together, knead a few times with your hands until the dough is no longer sticking to your hands.  Put in the fridge until you're ready to assemble your cobbler.

Assembly!

- Remove the casserole from the oven.

- On a floured surface, roll out the dough to about 3/4 inch thick and cut circles into the dough.  Use a small cutter (1 1/2 inch) as these biscuits are going to be used to top your cobbler.



- Place the cut biscuits on top of the warm tomato mixture and place back in the oven to cook for 15-17 minutes.

- Once the biscuits start to brown on top, the cobbler is ready!!  Be careful when serving as this dish can be really hot.
