White Bean and Feta Dip by Rachel

Another dip from me!  I know I've been lagging behind in the recipes, but Heather is about to embark on a journey to Japan for the next couple weeks so I'll be taking that time to catch up! :)  In the meantime, enjoy!



Ingredients

1 can of cannellini beans
2 tbsp crumbled feta cheese
1 tbs olive oil
1/4 cup fresh parsley
2 cloves garlic, peeled
1 tsp lemon juice
salt and pepper to taste



- Open the beans, drain them, and rinse them in cool water.


- Add everything into a food processor and purée.  You might need to stop and scrape the sides down to ensure that everything is blended smoothly.


That's it!  Put it in a nice bowl.  I added a sprig of parsley.  You can serve it and eat it right away.
